Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.

1-2 hrs
ingredients
1 cup whole wheat bread flour
1 cup spelt flour
1 cup white bread flour
1/3 cup quick-cooking oats
1/3 cup sunflower seeds (hulled)
1/4 cup brown sugar
2 tablespoons sesame seeds (hulled)
2 tablespoons peanut butter (chunky-natural)
4 teaspoons yeast
1 teaspoon cinnamon
1 teaspoon salt
1 cup chocolate chips (vegan)
1 medium naval orange
1 1/2 cup water
directions
Add all ingredients except the chocolate chips, orange and water to the automatic breadmaker.
Place one half cup of the water in a blender; add the whole orange, which has been cleaned and cut into pieces, and blend at high speed until the orange rind is cut into very small pieces.
Add the orange/water mixture to the other ingredients in the breadmaker, and start the machine.
Use the remainder of the water to wash out the blender, a little at a time, and add as needed to the bread dough to maintain proper consistency.
Just prior to the final rising add the chocolate chips and make sure they are mixed in uniformly.
After bread has baked and cooled, enjoy it with a cup of Cardamom Coffee. (Caution! Don't make this bread if you're on a diet, for once you start eating it, you won't want to stop.)
