ingredients

1 pound skinless, boneless chicken breasts, cut in strips
1 cup sliced onions
1 cup sliced mushrooms
1 bell pepper, sliced (red or green)
1 1/2 cup chicken broth, fat removed
1 teaspoon lemon juice
1/2 teaspoon dried thyme
1/4 teaspoon salt (optional)
1/2 cup skim milk
4 tablespoons unbleached flour
3 tablespoons sherry or chicken broth

directions

Spray skillet with non-stick cooking spray. Over medium heat, stir-fry chicken with onions, mushrooms and bell pepper until chicken is lightly browned. Add all but the last three ingredients. Cover and simmer for 10 minutes.

Meanwhile, in a covered container, shake milk with flour to prevent lumps. Stir into chicken along with the sherry. Bring to a boil, stirring constantly until thickened.
