INGREDIENTS:

1 pound chicken breast, cut 2" or 3" pieces
1 cup flaked or shredded coconut
1/2 cup flour
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 tablespoon garlic powder
1 egg, lightly beaten
1/3 cup melted butter


DIRECTIONS:

Heat oven to 400 degrees F.

Mix flour, coconut, salt, pepper and garlic powder together. Dip chicken bites in the egg then in the flour mixture. Place the chicken bites onto a greased cookie sheet or baking pan. Drizzle with melted butter.

Bake approximately 25 minutes or until the chicken is browned and cooked through. Turn once during cooking.

This is good served with an apricot or plum dipping sauce.

This is a DELICIOUS recipe, and a pleasant break from the normal chicken fingers routine. Our family really enjoys coconut, so I bumped up the coconut amount by almost a cup and it was a good move. While we were finishing eating I got the idea to drizzle just the slightest amount of Hersheys chocolate sauce on it, and WOW> I will be finishing it that way in the future when I plate it.
