4 boneless, skinless chicken breast halves
2 tablespoons canola oil
2 large onions, thinly sliced
3/4 cup thick and chunky salsa of your choice
1 cup sour cream
3/4 cup shredded Cheddar cheese
3/4 cup shredded Monterey Jack cheese
Garnish
1/4 cup shredded Cheddar cheese
1/4 cup shredded Monterey Jack cheese
Optional*
diced jalapenos
green chiles
sliced black olives
Preheat oven to 350 degrees F.
Season chicken with salt and pepper and pepper and lightly brown in oil. Set aside.
Saute onion just until soft. Mix cheeses, sour cream and salsa together. Spray a 9x13 baking pan with Pam and arrange chicken breasts, then top with onions. Pour sour cream mixture over and top with cheese garnishes (including any optional garnishes as desired). Bake uncovered for 30 minutes.

All around good and simple recipe. Instead of the two cheeses though I just used a mexican blend.

Good recipie! Made the following modificatios that made it better: Lightly dust Chx Breasts with chili powder Add 1/2 can of Rotel to the garnish Add 1/2 can of Black Beans to sauce mix Dont x-fer the chicken to a baking pan, just start by sauteing the onions is a oven safe skillet, put the whole ball of wax in the oven.
