Ah, the unassuming envelope of onion soup mix. It's more than just for onion soup (or dip). It adds tremendous flavor (and convenience) in all these recipes.
Taco Tot Casserole

ingredients
1 pound lean ground beef
1 package (1.25 ounce size) reduced sodium taco seasoning mix
1 can (14.5 ounce size) corn, drained
1/2 chopped small green or red pepper
2 tablespoons butter
1 can (10.75 ounce size) nacho cheese soup, undiluted
4 cups tater tots, onion tater tots, or hot tots
salsa, optional
sour cream, optional
directions
Heat oven to 375 degrees F. Prepare an ungreased 11x7x2" or 2 quart baking dish.
Brown the ground beef and add the taco seasoning mix. Spoon meat mixture into casserole. Sprinkle corn over meat mixture.
Saute chopped pepper in butter and then sprinkle over corn. Spread the soup over the peppers. Place tater tots in a single layer over soup.
Bake 40 to 45 minutes or until potatoes are lightly browned and the mixture is bubbly.
Serve with salsa and sour cream, if desired.

This was a fun change from your standard tator tot casserole. Grown-ups might want a little more zip to it (it was mild but tasty) so you could easily substitute spicier peppers.
