This creamy salmon and pasta is an easy weeknight meal, ready in under 15 minutes. The salmon is cooked and tossed with pasta and peas in a creamy sauce.

ingredients

12 ounces pasta (spaghetti or angel hair works well)
3 tablespoons oil, divided use
1 pound skinless salmon fillets
2 tablespoons shallots
1 cup heavy cream
1 tablespoon Dijon mustard
1/8 teaspoon dried tarragon
10 ounces frozen peas, thawed
1/4 cup grated Parmesan cheese, plus more if desired

directions

Cook the pasta in salted water until al dente. Drain and set aside.

Meanwhile, heat a large non-stick skillet over medium heat. Add half the oil and when hot, add the salmon. Cook until the salmon flakes easily, turning as needed. Remove the salmon from the skillet and set aside.

Add the remaining oil to the skillet along with the shallots. Cook, stirring frequently, until the shallots are softened.

Add the cream, mustard, and tarragon. Cook, stirring frequently, for 2 minutes or until the sauce begins to thicken. While the sauce is cooking, gently flake the salmon with a fork.

Add the salmon, pasta, peas, and parmesan cheese to the skillet. Toss gently to coat the pasta in the sauce.

Serve the creamy salmon and pasta hot with additional parmesan if desired.

    It was very tasty. We grilled the salmon with some olive oil. Cooked the rest of the ingredients and added cooked linguine. Served the creamy pasta with grilled salmon on top.
