Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.

This dish was a smash hit in my household. The flavor and texture was excellent. It was easy to prepare and all the ingredients were in my garden or pantry. All I added was a shake of Mrs. Dash. It's a Salmon lovers delight.
