Basic Best Salmon Loaf

ingredients
1 can (15 ounce size) salmon
2 cups soft bread crumbs
1/3 cup finely minced onions
1/4 cup milk
2 eggs
2 tablespoons chopped parsley
1 tablespoon lemon juice
1/4 teaspoon dill weed
1 dash black pepper
directions
Drain and flake salmon, reserving 2 tablespoons liquid. Combine flaked salmon and reserved liquid with remaining ingredients.
Place in well-greased 8 1/2 x 4 1/2 x 2 1/2 inch loaf pan or shape into loaf on greased baking pan. Bake at 350 degrees F for 45 minutes.

I tried making 2/3 of the recipe (I had 2 5 oz. cans of salmon, instead of 1 15 oz.can),using 1 egg. The result was too dry to make into a loaf, so I added a little more milk, and 2 tbsp butter. The resulting loaf was a little dry, but had good flavor. If I make the same again, I will use 2 eggs, and probably add a sauce.

I had a big can of salmon in the back of the pantry and no idea how to turn it into a great meal. I am very impressed with this recipe as it gives the option of baking as a loaf (which I did). The recipe is quick to make up, and baking in a loaf tin eliminated the messy patty part. Best of all, it was much healthier without being fried in oil, it's very tasty and everybody in our family enjoyed it - including our 10 month old. I will happily make again, thanks for sharing this recipe.
