Spinach Strawberry Salad with Poppy Seed Dressing

ingredients
Dressing
1 cup granulated sugar
1 teaspoon dry mustard
1/2 teaspoon salt
1 1/2 teaspoon paprika
1/2 cup apple cider vinegar
1 1/2 cup salad oil
1 teaspoon grated onion
1 tablespoon poppy seeds (optional)
Salad
1 package fresh spinach leaves torn into bite size pieces
2 fresh oranges, peeled and sectioned
fresh mushrooms, sliced
1 small red onion, thinly sliced
sliced fresh strawberries
red grapes
sliced almonds
directions
For Dressing: Mix sugar, mustard, salt, paprika and vinegar in a medium mixer bowl. Slowly add the oil beating constantly with an electric mixer. Continue beating until thick.
Add the onions and poppy seeds (if using) and beat a few minutes more or until the sugar dissolves. Store any remaining dressing in the refrigerator.
For Salad: Mix all but the almonds in a bowl, add the dressing a little at a time until you get the salad dressed with as much dressing as needed. Toss well then add the almonds on top of the salad.
