ingredients
1 pound spinach, stemmed washed & torn
4 marinated grilled chicken breast halves, sliced in strips
2 cups Cheddar cheese, grated
2 cups mozzarella cheese, grated
sliced mushrooms, for garnish (optional)
bean sprouts, for garnish (optional)
MARINADE FOR GRILLED CHICKEN
1/2 cup vegetable oil
1/4 cup lemon juice
1 tablespoon paprika
2 tablespoons Worcestershire sauce
2 tablespoons vinegar
1 teaspoon salt
2 teaspoons sugar
2 teaspoons garlic salt
DIJON VINAIGRETTE
2 tablespoons white wine vinegar
1 teaspoon Dijon mustard
1/4 teaspoon cumin
1/4 cup olive oil
directions
Marinade for chicken: Mix marinade ingredients and pour over chicken; refrigerate overnight. Drain chicken; grill over hot coals until done, about 5 minutes a side.
Dijon Vinaigrette: In a bowl, mix well all vinaigrette ingredients.
Divide spinach into equal parts; place on individual plates. Layer with chicken, then cheese. Top with mushrooms, sprouts, and vinaigrette.
