Tender pork steaks and delicious fall vegetables make up this easy one-dish meal
2 pork steaks (or pork chops)
salt and pepper to taste
Cajun seasoning to taste
2 tablespoons oil, divided
1 onion, chopped
1 medium sweet potato, sliced
2 carrots, sliced in 1-inch pieces
2 small potatoes, quartered if desired
6 large mushrooms, sliced
1 cup chicken broth
1/2 cup white wine
Preheat oven to 350 degrees F.
Season steaks with salt, pepper and Cajun seasoning (or your favorite seasoning). Over high heat, heat a cast iron skillet with half of the oil. Lower heat to medium-high, place steaks in a skillet and brown on both sides.
Remove from skillet, add remaining oil, add all vegetables and cook until lightly browned and slightly wilted.
Pour in the wine to deglaze pan and make sure you scrape the bottom of skillet to loosen all browned particles. Let simmer for 3 minutes, then return steaks to pan.
Add chicken broth. You want enough liquid to almost cover the steaks.
Remove from heat and cover skillet with foil or tight fitting lid and place in oven. Cook for 40 minutes at 350 degrees F or until juices run clear when you cut into the pork.

I omitted the mushrooms because I didn't have any and instead of chopped onion I used whole pearl onions which got nice and caramelized. Fantastic recipe. Will definitely make again because it was so simple but yet so satisfying. The whole family loved it.

I didn't use the mushroom or sweet potato just regular potato and carrots and this was really good whole family loved it. Will make again.
