ingredients
20 1/2 ounces silken tofu
3 tablespoons honey
1 teaspoon vanilla extract
1/8 teaspoon cinnamon
1 can (8 ounce size) crushed pineapple, very well drained
1/2 cup chopped pitted dates
directions
Combine silken tofu, honey, vanilla and cinnamon in a blender container. Whirl until smooth, stopping to scrape down sides of container as necessary.
Put tofu mixture in a small bowl and stir in pineapple and dates.
Serve with bagels, muffins, pancakes or other breakfast breads. Can spread on apple slices. Also good on graham crackers for a snack or dessert.
