A simple and fun breakfast idea made with cottage cheese and peaches and served in ice cream cones.


1 cup cottage cheese
2 tablespoons powdered sugar
2 drops vanilla extract
1/2 cup chopped, peaches (canned or fresh), well drained
4 flat-bottom ice cream cones
Combine the cottage cheese, powdered sugar, and vanilla in a bowl and mix well. Add more sugar if desired. Stir in the peaches.
Stand the cones up on a flat surface. Carefully divide the filling between the cones. If desired, drizzle with syrup or caramel or other topping.
Serve immediately.

A nice, light breakfast that, surprisingly, wasn't as sweet as I expected. The cone makes for a neat, portable way to eat your breakfast on the go!

What a fun breakfast idea! And it's not as sweet as it sounds. The cottage cheese balances out the sweetness of the powdered sugar and peaches. In fact, I added some brown sugar on top to give it a little extra sweet factor.
