1/2 cup mashed potatoes
2 tablespoons butter
1 1/2 teaspoon salt
2 tablespoons sugar
3 cups flour
2 teaspoons yeast
directions
Combine all ingredients in bread machine as directed by machine manufacturer.
Bake on white bread setting; crust color as desired.

This is the lightest, fluffiest white bread I've ever eaten. I've made it with some skin in the potatoes or with carrots added before mashing, and it's turned out wonderfully. It turned out perfectly every time I made it - but now I've got a new machine that only makes 2 lb loaves. So, my next adventure is trying to modify the recipe so I get a nice 2 lb loaf. Wish me luck!

Wonderful, easy recipe. This bread has great potato flavor and went very well paired with my slow cooked beef stew. What a great way to use up leftover boiled potatoes. Thanks for sharing it!
