ingredients
1/4 cup cracked wheat
2 tablespoons millet
1 cup boiling water
1 1/4 cup water
2 tablespoons molasses or honey
2 teaspoons shortening
2 cups whole wheat flour
1 cup bread flour
1/4 cup regular or quick-cooking rolled oats
3 tablespoons cornmeal
2 tablespoons toasted wheat germ or unprocessed wheat bran
1 tablespoon gluten flour
3/4 teaspoon salt
1 teaspoon active dry yeast or bread machine yeast
directions
In a small bowl combine the cracked wheat and millet. Add the 1 cup boiling water. Let stand for 5 minutes; drain well.
Add the remaining ingredients to a 1-1/2- to 2-pound bread machine according to the manufacturer's directions, adding the cracked wheat mixture with the water.
If available, select the whole grain cycle, or select the basic white bread cycle, and desired color setting.
