Quick Bread Base
1 1/2 cup flour
1/2 teaspoon salt
1 cup sugar
1 teaspoon baking soda
1/2 cup vegetable oil
2 eggs, beaten
Pumpkin Variation
1 cup canned pumpkin
2 teaspoons pumpkin pie spice
1/3 cup nuts (optional)
1/3 cup raisins (optional)
Apple Variation
1 cup applesauce
1 tablespoon molasses
1 teaspoon cinnamon
Banana Variation
3 ripe bananas, mashed
1/2 teaspoon cinnamon
1/2 teaspoon ginger
Peanut Butter Banana Variation
2 ripe bananas, mashed
1/2 cup peanut butter
Cranberry Variation
1 cup cranberries, chopped
1 tablespoon orange juice concentrate
directions
Preheat oven to 325 degrees.
Gather the ingredients for the Quick Bread Base and one of the variations.
Coat small loaf pans with vegetable cooking spray.
Combine dry ingredients; blend well and set aside. Combine wet ingredients; blend well. Mix together wet and dry ingredients. Do not overmix.
Distribute batter among the pans, and bake for 30 to 40 minutes.

I make the apple one about once a week. I use honey instead of molasses. I like it because I can make it up very quickly and have delicious bread ready in under an hour.

I've made both the apple and peanut butter banana variations and we just absolutely adore this recipe. Tasty and moist. The peanut butter banana version was our favorite. My inlaws are visiting next weekend and they love cranberry so I'm going to make that version when there are here.

Very good! I tried the pumpkin and it is delicious. I subed dried cranberries for the raisens and it is a wonderful combination. Thank you for a great recipe!
