Caraway Red Cabbage

ingredients
1/4 cup butter
1 head red cabbage
2 tablespoons lemon juice
1 teaspoon caraway seeds
1/2 cup onion, chopped
1 cup brown sugar
1 cup cider vinegar
salt and pepper, to taste
directions
Cut cabbage in four sections and slice off hard core. Shred with sharp knife. Place in a large pot and season with salt and pepper.
Melt butter in a large skillet and saute onion until golden. Add to the pot of cabbage.
Toast whole caraway seeds in a dry pan until you start to smell them, then remove from heat and cool.
Mix brown sugar, vinegar, lemon juice and caraway seeds in a bowl. Taste to be sure the flavors are balanced. Add more sugar or lemon juice or vinegar to your taste.
Add to cabbage and onions. Cook covered over medium heat until cabbage is tender, about 30 minutes.
