Every pizza should be an extra-cheese pizza. This oven-baked recipe is quick and easy, but feel free to make your own crust and sauce if you've got extra time and motivation (in addition to extra cheese). A classic sprinkling of red pepper and herbs is all the topping this pie needs.

1 thin-crust Italian bread shell (12-inch size)
1 cup pizza sauce
2 tablespoons grated Parmesan cheese
1 1/3 cup shredded part-skim mozzarella cheese
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
crushed red pepper flakes, to taste
Preheat the oven to 450 degrees F.
Place the bread shell on an ungreased pizza pan.
Spread a layer of the pizza sauce over the shell, leaving a 1-inch border around the edges.
Sprinkle the pizza evenly with the Parmesan cheese and half of the mozzarella.
Sprinkle the pizza evenly with the oregano, basil, and crushed red pepper. Top with the remaining mozzarella.
Place the pizza in the oven and bake at 450 degrees F for 13-15 minutes or until the crust has lightly browned and the cheese is melted.
Cut the cheese pizza into wedges and serve immediately.

My oldest daughter is going through a phase where she's being picky about food (at 16?). She will eat pizzas but is finicky about the toppings. I was amazed that she would eat this one because she's turned her nose up other cheese pizzas. I think it was just the right blend of seasonings for her. The rest of us non picky eaters enjoyed it too!
