Reasonably Easy Sweet And Sour Chicken

ingredients
1 can (8 oz. size) pineapple chunks, save juice
1/2 cup onion
2 tablespoons shortening
1 1/2 cup water
2 cups carrots, sliced
3 chicken bouillon cubes
1/4 cup brown sugar
1/4 teaspoon ginger
1/4 cup ketchup
2 tablespoons vinegar
1 tablespoon soy sauce
3 tablespoons cornstarch
2 cups diced chicken
1 cup green bell pepper
directions
Melt shortening in frying pan. Add onion, carrots reserved pineapple juice, and water.
Combine sugar, cornstarch, ginger, catsup, vinegar and soy sauce. Stir into cooked vegetable mixture. Cook until thickened.
Add chicken, green pepper and pineapple. Cover and cook 5 minutes. Serve with rice.
