ingredients
2 eggs, separated
1/2 cup sugar
1/2 cup honey
1/2 cup vegetable oil
1 3/4 cup all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon ground cloves
1/4 teaspoon salt
1/2 cup strong coffee
1/2 cup raisins
powdered sugar to dust over cake
directions
In medium mixing bowl, beat egg whites until stiff peaks form. Set aside.
In another bowl, beat the egg yolks. Add the sugar and honey, beating until smooth. Add the oil.
Stir in the flour, baking soda, baking powder, cinnamon, nutmeg, cloves, salt and coffee, mixing until batter is smooth. Add the raisins. Fold in the beaten egg whites.
Turn into a greased cake pan. Bake at 350 degrees F for 35 to 40 minutes or until tester comes out clean. Cool. Dust with powdered sugar.
