Apricot Bites

ingredients
12 fresh apricots, halved, pits removed
4 ounces fat-free cream cheese, softened
1/2 cup finely chopped shelled pistachios
directions
Place the apricot halves cut-side up on a plate.
Add the cream cheese to a mixing bowl. Beat with an electric mixer on medium speed until light and fluffy. Spoon the cream cheese into a pastry bag fitted with a plain tip. Pipe the mixture into the apricot halves (or just spoon it in if you don't have a pastry bag).
Sprinkle the filled apricots with the chopped pistachios. Serve immediately.
