Baked Apricot Pudding

ingredients
4 tablespoons fine white breadcrumbs
4 tablespoons sugar
2 cups milk
1 can apricots or stewed apricots
3 eggs
directions
Mix breadcrumbs and sugar. Boil milk, and pour onto breadcrumbs. Allow to stand for 1/2 hour.
Grease an ovenproof dish. Place the apricots and a little of the syrup (1/2 cup) in the pie dish. Beat the 3 egg yolks and 1 egg white together. Add to breadcrumbs, and milk, mix thoroughly and pour onto the apricots.
Bake in a moderate oven, 350 degrees F to 375 degrees F until mixture sets.
Beat remaining egg whites stiffly, add sugar and beat again until stiff and frothy, then pile roughly on top of pudding. Return to oven for a few minutes to set white of egg. Serve hot or cold.
