Halloween Pumpkin Chocolate Chip Cookies

ingredients
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 cup unsalted butter, softened
3/4 cup granulated sugar
3/4 cup packed brown sugar
1 egg
1 teaspoon vanilla extract
1 cup canned pumpkin
orange food coloring, as needed
1 cup chocolate chips
directions
Preheat the oven to 350 degrees F. Grease a baking sheet.
Sift together the flour, baking soda, and cinnamon and place in a bowl.
In a large mixing bowl, beat together the butter, granulated sugar, and brown sugar with an electric mixer until light. With the mixer running, add the egg and vanilla.
With the mixer running, slowly add the flour mixture, 1/2 cup at a time, until completely mixed. Scrape down the sides of the bowl as needed.
Add the pumpkin. Add the orange food coloring a few drops at a time until the desired color is reached.
Stir the chocolate chips into the cookie dough by hand.
Form small spoonfuls of dough into balls and place 2-inches apart on the baking sheet. Flatten each slightly.
Place the cookies in the oven and bake at 350 degrees F for 12-14 minutes or until just lightly golden brown.
Remove from the oven and let the cookies cool for 5 minutes on the baking sheet, then transfer them to a wire rack to cool completely. Store the cookies in an airtight container.
