It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).

1 cup butter, softened
1/2 cup powdered sugar
1 teaspoon vanilla extract
2 1/4 cups flour
1/4 teaspoon salt
3/4 cup chopped nuts
Heat oven to 400 degrees F.
Thoroughly mix butter, sugar and vanilla. Work in flour, salt and nuts until dough holds together. Shape into 1 inch balls.
Place on ungreased cookie sheet. Bake 10-12 minutes or until set but not brown.
While warm, roll in powdered sugar. Cool. Roll in powdered sugar again.

Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.
What's the secret ingredient in these cakes? Pudding mix. It not only adds flavor but it gives the cake a richer, creamier texture. No one will know your secret ingredient!
