Fortune cookies are fun to make at home. They have a light flavor with touches of vanilla and almond extract. The best part about making your own fortune cookies is deciding your own fortune!

ingredients

3 egg whites
3/4 cup white sugar
1/2 cup butter, melted and cooled
1/4 teaspoon vanilla extract
1/4 teaspoon almond extract
2 tablespoons water
1 cup all-purpose flour

directions

Preheat the oven to 375 degrees F. Grease cookie sheets, or line with parchment paper. Write fortunes on small strips of paper and set them aside.

Combine the egg whites and sugar in a mixing bowl and beat on high speed with an electric mixer for 2 minutes or until frothy. With the mixer running, add the melted butter, vanilla extract, almond extract, water, and flour. Scrape down the sides as needed. The batter will be thin.

Using a ladle, pour the batter onto the prepared cookie sheets in 3-inch circles (do not let them touch and allow for the cookies to spread while baking).

Place the cookie sheets in the oven and bake for 5-7 minutes or until the edges just begin to turn brown. Do not undercook them or they will be spongy but also do not overbake or they will be hard to form.

Remove the cookie sheets from the oven. Working quickly, remove one cookie at a time. Place one message in the center and fold in half then fold the ends together to form the fortune cookie shape.

Place on a wire rack to cool.

Store the cookies in an airtight container at room temperature for up to 1 week.

    I have made fortune cookies before but this was my first time trying this recipe. I thought it was way too involved for a fortune cookie. They were cake like and spongey. The flavor of the cookie was nice, so I ended up making one giant "cookie" in an 8in pie pan and putting a fruit compote over it. Good flavor wrong texture.

    • As the recipe states, if they are spongey then they are underbaked
