Crisp Coffee Cookies

ingredients
2 tablespoons instant coffee granules, plain or flavored
1 tablespoon milk
1/2 cup shortening
1/4 cup butter or margarine, softened
1/2 cup granulated sugar
1/2 cup brown sugar
1 teaspoon vanilla extract
1 egg
2 cups all-purpose flour
1/2 teaspoon salt
1/4 teaspoon baking soda
1/4 teaspoon baking powder
granulated sugar
Chocolate Glaze
2 tablespoons margarine or butter
2 tablespoons baking cocoa
2 tablespoons water
1 1/3 cup powdered sugar
directions
Heat oven to 325 degrees F.
Dissolve coffee granules in milk. Mix shortening, margarine, 1/2 cup granulated sugar, the brown sugar, vanilla, egg and coffee mixture in large bowl. Stir in flour, salt, baking soda and baking powder.
Shape dough by teaspoonfuls into 1-inch balls. Place 2 inches apart on ungreased cookie sheet. Flatten to 1/4-inch thickness with greased bottom of glass dipped in granulated sugar.
Bake 8 to 10 minutes or until light brown. Remove from the cookie sheet to wire rack; cool completely. Drizzle with chocolate glaze.
For Chocolate Glaze: Heat margarine, cocoa and water in saucepan over low heat, stirring occasionally, until margarine is melted. Stir in powdered sugar until smooth.

OMG! Best coffee cookie recipe I've tried. I added mini semi sweet chips and chopped walnuts too. Can't wait to make these for my friends!

Wow - these are terrific! Had to bake for 12-13 minutes. I used Nutella for a topping instead of chocolate glaze. My new favorite.

Oh My Gosh!!! I definently recommend it to evey coffee and chocolate lover. I had to cook mine a few extra minutes but they were DELISH!
