ingredients
2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
2/3 cup shortening
1 1/4 cup sugar
1 egg
1/2 teaspoon vanilla extract
1/2 teaspoon almond extract
3/4 cup crushed pineapple, well drained
1/2 cup coconut
directions
Mix flour, baking powder, and salt. Set aside.
Cream shortening, sugar, egg, vanilla, and almond. Blend in pineapple and coconut. Add flour mixture.
Drop by teaspoon on ungreased cookie sheet 3 inches apart. Sprinkle with coconut. Bake at 325 degrees F for 20 minutes.
