Italian Chocolate-Amaretto Mousse

ingredients
8 egg yolks
1/4 cup sugar
1/4 cup Amaretto liqueur
12 ounces semisweet chocolate chips
1/2 cup hot, strong coffee
2 1/2 cups heavy whipping cream
directions
In medium bowl, whisk egg yolks and sugar until lemon-colored and fluffy. Whisk in liqueur.
Place chocolate chips and coffee in medium heatproof bowl. Place bowl over saucepan of barely simmering water (bowl should not touch water). Whisk until melted and smooth.
Slowly whisk egg yolk mixture into chocolate mixture. Cook and whisk until mixture reaches 160 degrees F, about 4 minutes. Remove bowl from saucepan, pour into large bowl. Cool 30 minutes or until lukewarm.
Meanwhile, beat cream in large bowl at medium-high speed until firm but not stiff peaks form. Stir one-third of the whipped cream into cooled chocolate mixture until completely blended. Gently fold in remaining whipped cream until well-mixed.
Divide mixture among individual stemmed glasses or serving dishes. Refrigerate at least 2 hours.
