These tasty peanut butter bonbons are quick and easy, but they're also delicious. They only take a few ingredients and you can whip up a batch in no time.
1 cup chunky or smooth peanut butter
2 tablespoons butter, softened
1 cup sifted powdered sugar
6 ounces semisweet chocolate chips
1 teaspoon solid vegetable shortening
Combine the peanut butter, butter, and powdered sugar in a bowl. Mix until smooth. Form the mixture into 1-inch balls. Place on a waxed paper lined baking sheet and refrigerate.
Meanwhile, combine the chocolate chips and shortening in the top of a double boiler over simmering, not boiling, water. Mix the chocolate until smooth. Remove the pan from the heat.
Carefully dip the peanut butter balls into the warm chocolate, coating them completely (use a toothpick or fork to hold them). Let any excess chocolate drip off then place the bonbons on a waxed paper lined baking sheet and chill until firm.
Store the bonbons in an airtight container in a location away from heat sources. For best results, do not store the bonbons in the refrigerator.
