ingredients
1 can (15 ounce size) pumpkin
1/2 large red onion, julienne cut
1/8 cup honey
1/2 teaspoon cinnamon
1/8 teaspoon nutmeg
1 dash ground cloves
1 pound butter
directions
Warm the pumpkin on low heat (you do not want it hot).
Spray a saute pan lightly with cooking spray and saute the julienne onion until lightly caramelized.
Mix in the honey and spices, and take pan off the heat. Let mixture cool until just warm.
With an electric mixer, blend pumpkin and onion mixture together. Slowly add the butter.
When blended, put into ramekins and refrigerate. Serve chilled with sliced bread.
