Simple Baked Haddock With Basil Curry Mustard Sauce

The basil curry mustard sauce provides a delicious and unique flavor to the simple fish, while the baking process ensures that the haddock remains moist and tender.
ingredients
2 pounds haddock fillets, cut in serving pieces and patted dry with paper toweling
1/2 cup evaporated milk
1 1/2 cup fine bread crumbs
3/4 cup mayonnaise
1 tablespoon lemon juice
1 teaspoon dried basil
1 teaspoon curry powder
1/2 teaspoon prepared mustard
directions
Preheat the oven to 350 degrees F. Grease a 9x13-inch baking dish.
Place the evaporated milk in a shallow bowl. Place the bread crumbs in another shallow bowl.
Dip the fish pieces first in the evaporated milk, coating them completely and letting any excess drip off. Next, dredge the fish in the bread crumbs, pressing them gently so they adhere. Place the fish in a single layer in the greased baking dish.
Place the baking dish in the oven and bake at 350 degrees F for 15 minutes.
Meanwhile, combine the mayonnaise, lemon juice, basil, curry powder, and mustard in a small bowl. Mix well and let stand at room temperature while the fish cooks.
Remove the fish from the oven. Turn the oven to broil. Spread the basil curry mustard sauce evenly on each fillet and return the fish to the oven. Place under the broiler and let cook until bubbly and browned.
Remove the fish from the oven and serve hot.

This was easy and good. The topping kept the fish from drying out. We used fresh basil from our garden.
