2 large Russet potatoes, scrubbed and cubed 6 tablespoons pure butter 1/2 teaspoon salt 3 teaspoons cajun spice blend 4 cloves fresh minced garlic 6 dashes hot pepper sauce diced green onion for garnish
directions
Cook potatoes in boiling salted water just til a fork can be inserted.
Remove from pan with a spider or slotted spoon and place in skillet heated with half the butter. Stir gently to coat; turn down heat to medium low. Let potatoes caramelize (turning slightly brown) before turning or stirring. Stir gently several times.
Toss in garlic while heat is still low to avoid burning. Add remaining butter (optional). Add hot pepper sauce, cajun seasoning, stir gently. Let heat through and arrange on plate, garnish with green onion. DE-licious!

Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.
