6 cups frozen hash browns, partially thawed
1/2 cup butter or margarine, melted
1/2 cup chopped onion
1 teaspoon salt
2 cans (10.25 ounce size) cream of chicken soup
1 cup sour cream
1 cup crushed potato chips or corn flakes

directions

Grease the inside of the crock pot.

In a bowl, mix together the hash browns, melted butter, onion, salt, and soup. Mix well then transfer to the crock pot.

Cover the crock pot and cook on low heat for 2-3 hours.

Stir the sour cream into the potato mixture. Sprinkle the crushed potato chips over the top. Cover the crock pot and cook on low heat for 30-60 more minutes or until heated through.

Serve hot.

    I made this for an office luncheon so I used cream of mushroom soup instead to make it a vegetarian option. I also used potatoes Obrien instead of plain hash browns. It turned out great!

    I've made this recipe about 10 times now and it always turns out delicious. It's very filling and hearty so I'd say it feeds more like 8-10 people. I also often add some chopped bell pepper for color.
