Sinful Potatoes

ingredients
1 pound velveeta cheese
2 pounds frozen hash browns, thawed
1 pint mayonnaise
1/4 pound bacon, fried and crumbled
directions
Melt cheese in double boiler. Mix with hash browns and mayonnaise. Top with crumbled bacon. Place in 9x13-inch greased baking dish. May mix and bake later, if desired. Bake at 350 degrees F for 45 minutes to 1 hour.

I was a little concerned about baking this with mayo in it because I'd never made anything hot with mayo like this but wow was it good. Sinful is exactly right. I could feel my arteries clogging as I ate it but I couldn't stop and didn't care!!!! It should technically feed 10 people if you go by calories but there is now way anyone will count calories while eating it because you can't stop eating it. Four of us scarfed the entire thing down (we expected we'd have leftovers).

I love this recipe!! But instead of melting the cheese before mixing with the rest of the ingredients, I use the velveeta crumbles that way you just throw everything together in a one step process. It's much faster! I also add green onions to it. : )

I found this recipe in 1982 in Downers Grove, Illinois. It is ABSOLUTELY THE BEST POTATO RECIPE EVER !!! I double the recipe and take it to "potlucks", Funeral luncheons, etc. where a large dish is required...People RAVE over it. Try it ! mDf
