ingredients
6 large baking potatoes, unpeeled
1/2 cup oil
2 large onions, sliced into 1/4 inch rings
1 teaspoon salt
1/4 teaspoon black pepper
chopped fresh parsley
directions
Put potatoes in large pot and cover with water. Bring to boil over high heat, reduce heat and simmer 20-30 minutes until potatoes are almost tender when pierced with a knife.
Rinse under cold running water, drain and let cool about 15 minutes. Cooked potatoes may be refrigerated until the next day.
Slice into 1/2 inch thick rounds. Heat oil in a deep skillet over high heat or use 2 small skillets. Add potatoes and cook 10 minutes, turning occasionally.
Add onion rings and cook 40-50 minutes more, turning occasionally until vegetables are brown and potatoes are crisp. Mix in salt and pepper.
Remove to warm serving platter and sprinkle with parsley.
