ingredients
4 medium baked potatoes, cut in 1/3" slices, with skins left on
4 tablespoons butter
2 tablespoons olive oil
salt and pepper
2 tablespoons minced fresh parsley or chives (for garnish)

In large, heavy skillet, melt butter and oil over medium-high heat. Saute slices of potato in one layer, turning slices as they become golden brown.
These can be cooked in batches and kept warm, uncovered, in oven on low setting. If slices are kept warm this way, you may need to add more butter while cooking.
Sprinkle cooked slices with salt and pepper to taste and add parsley or chives as a garnish.

Skipped the parsley and added some cajun seasoning instead. Kicked up the heat value a notch or two with a sprinkle of cayenne. Good stuff.
