Soy Pizza Di Palermo

Dough
1 envelope active dry yeast
1 cup warm water
1 teaspoon salt
1 tablespoon olive oil
1/2 teaspoon granulated sugar
2 1/2 cups all-purpose flour
1 packet plain soy protein powder
Toppings
2/3 cup pesto
4 artichoke hearts, sliced
8 ounces crab meat
1/2 cup pitted kalamata olives
1 1/2 cup grated low-fat mozzarella cheese
1/2 red bell pepper, thinly sliced
directions
For Dough: In a medium bowl mix yeast with warm water. Let sit for 5 minutes.
Mix in salt, olive oil, sugar and flour until a thick dough forms. Knead dough on a lightly floured counter and let it rest for 3 minutes. Knead in soy and set back in warm place for 30 minutes to an hour to let the dough rise.
Heat oven to 400 degrees F.
Roll out dough on medium size pizza stone. Rub a small amount of olive oil on the surface of the dough. Sprinkle toppings on dough.
Place pizza in oven and bake for 15 minutes or until crust is done or golden brown.
