Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.
Sweet Onion Relish

ingredients
5 pounds sweet onions, chopped
1 cup sugar
2 1/4 cups white vinegar (5% acidity)
2 tablespoons salt
2 tablespoons celery seeds
directions
Combine all ingredients in a Dutch oven; bring to a boil over medium heat.
Reduce heat, and simmer 20 minutes, stirring occasionally.
Spoon relish into hot jars, filling to 1/2" from top. Remove air bubbles; wipe jar rims. Cover at once with metal lids, and screw on bands. Process in boiling-water bath 10 minutes.
Let stand 1 week before serving. Store in refrigerator after opening.

This is the perfect recipe for canning and using up the rest of your vidalia onions before they spoil. Fabulous on brats, dogs and burgers or any other dish/salads you would use a relish in to zip up the flavor of the dish. Excellent! Thank you!
