A can of cream of mushroom soup can be a real dinner saver. It works great in casseroles and can turn into a sauce or gravy in a pinch.
Layered Mediterranean Pie

ingredients
1 onion, chopped
1 clove garlic, minced
1 tablespoon olive oil
1 package (10 ounce size) baby spinach
1 envelope pie crust mix (double crust size)
8 ounces thinly sliced (shaved) ham
8 ounces mozzarella cheese, sliced very thinly or shredded
1 red pepper, julienne finely
4 eggs, beaten
directions
Saute onion and garlic in oil until tender. Lightly steam spinach; drain well and stir into onion mixture.
Prepare pastry according to package directions for two-crust pie. Roll out bottom crust and fit into a deep 9" pie plate or quiche pan.
Preheat oven to 400 degrees F.
Lay ham slices evenly in pastry. Cover with cheese, spinach mixture and then red pepper slices. Reserve a little of the beaten egg for brushing pastry top, and pour remainder into pie over other ingredients.
Cover with top crust, decorating with any leftover pastry if desired. Seal edges well and brush with reserved egg. Cut slits into top crust to allow steam to escape.
Bake at 400 degrees F for 35 to 40 minutes or until pastry is golden.
