Mini bagels (or just use regular bagels cut up into quarters) topped with a creamy, colorful veggie topping make an awesome appetizer or party snack.
1 cup shredded monterey jack cheese
1/4 cup salad dressing or mayonnaise
2 tablespoons shredded carrots
1 tablespoon finely chopped green onion
1 tablespoon finely chopped red bell pepper
6 miniature bagels, split and toasted
Preheat the broiler.
Combine the cheese, mayo, carrots, green onion, and bell pepper until well mixed.
Spread the cheese mixture on the cut sides of the bagels. Place the bagels on a baking sheet, spread side up.
Place the baking sheet under the broiler and broil for 3-4 minutes or until the cheese is bubbly and melted.
Serve hot.
you can use this on full size bagels, just cut them into wedges. The spread is also good on party rye bread

Been meaning to write this review for a long time. I made these for a party so I changed the serving size to be 48. I also used party rye instead of bagels and then cut them with cookie cutters into shapes. Not a single one was left.

I used full size bagels and cut them into bite sized pieces after broiling them. I also omit the carrots but that's it. Turned out really good and the kids loved them.

Delicious bites - perfect for a party or a snack. I used whole wheat mini bagels. If you want to add some "heat" use pepper jack cheese.
