Ah, the unassuming envelope of onion soup mix. It's more than just for onion soup (or dip). It adds tremendous flavor (and convenience) in all these recipes.

ingredients
1 small onion, peeled
6 tablespoons mayonnaise
salt, to taste
freshly ground black pepper, to taste
6 slices white bread, crusts removed
3 tablespoons freshly grated Parmesan cheese
directions
Preheat the oven to 350 degrees F.
Slice the onion into thin slivers and place in a bowl. Mix in 5 tablespoons of the mayonnaise along with salt and pepper, to taste. Mix well then set aside.
Spread half of the bread with the remaining mayonnaise on one side only.
Spread the remaining slices of bread with the onion mixture (on one side only). Top the onion with the other slices of bread, mayonnaise side up.
Cut the sandwiches into quarters. Sprinkle the tops with the Parmesan. Place the sandwiches on a baking sheet and bake at 350 degrees F for 15 minutes or until lightly puffed and browned.
Remove from the oven and serve immediately.
