Bacon Water Chestnut Roll Ups

ingredients
1 can (8 once size) whole water chestnuts
1 pound bacon
1/4 cup mayonnaise
1/4 cup chili sauce
1/2 cup firmly packed brown sugar
directions
Cut each bacon strip in thirds, wrap around chestnut, and secure with a toothpick. Mix mayonnaise, chili sauce and brown sugar and pour over bacon roll-ups.
Bake at 350 degrees F for 45 minutes. Serve hot.

These sounds delicious. I will try them tomorrow.
I found what works best is heating the sauce on the stove in a pan first and pour the sauce over the bacon wraps when they are almost done-this way the sauce does not burn.

My aunt and my mom make these except they add cooked chicken livers and wrap the bacon around them and the water chestnuts... soooo good.

I have been making these for about 20 years, although my recipe calls for a different way to cook them (and it does not involve any smoke billowing out of the oven!!) I roll up the bacon and chestnuts and place them on a cookie sheet. I bake them until mostly done, anywhere between 40 minutes and an hour, depending on your oven and bacon being used. I drain off all the grease that accumulates and then add all the sauce on top of the bacon/chestnuts. I cook an additional 20 minutes. This is my most requested recipe by far!!!

The base of this recipe is good, but the mostly brown sugar sauce ended up burning halfway through cooking. You definitely don't want to put the sauce on at the start or there will be smoke billowing out of your oven. Instead I would recommend brushing the mixture onto the partially cooked roll ups with 5 minutes or less remaining in the cooking. Anything more and you get a hard, sticky goop.
