1 bunch fresh spinach
1/4 cup medium onion, minced
1/4 cup celery (chopped, including leaves)
1 tablespoon butter
2 tablespoons flour
3 cups chicken broth
1/2 cup cream
1/4 cup medium sherry
1/4 teaspoon nutmeg
To taste salt, white pepper
Wash spinach carefully, and discard any thick stalks. Melt butter over medium heat. Add onion and celery and saute until onion is translucent (about 3 minutes.) Stir in flour, add salt and pepper, and cook for 2 minutes. Add chicken stock, stirring well. Heat until it starts to boil, stirring frequently.
Add spinach and simmer for 15 minutes. Remove from heat and allow to cool for 15 minutes. Using a food processor with steel blades, or a blender, puree the mixture in batches until it is smooth with dark green flecks. Return to a medium heat, taste and correct seasoning. Stir in cream, sherry, and nutmeg. Do not allow to boil. Serve immediately.

You may get this 2ce, my text block blew up and went I know not where. So... for the 'bunch' of spinach I used 16 oz (purchased at Sam's Club). Also added ~ 1 tsp minced garlic and at the end shredded parmesan cheese (~ 2/3 cup). Added salt & pepper to the blended spinach. Otherwise followed recipe. Was very nice flavor, texture and appearance. Will definitely make again!

Had to research what a 'bunch of spinach' was. Found lots of disparaging comments from others who wondered the same thing; however, found one helpful comment that said spinach could be purchased with leaves sorted, stemside down and bundled and the best approximation they had was that 1 bunch of spinach was ~ 1 pound of spinach. So I opted to use a whole pkg (16 oz) of spinach I'd purchased at Sam's Club. Also added about 1 tsp minced garlic and shredded a little (~2/3

Absolutely delicious. I used veg stock, substituted brandy for sherry and used 16oz frozen spinach instead of fresh but the taste was out of this world!

Delicious recipe. I made a few moderations--used veg. broth, 1 cup half-and-half (instead of 1/2 cup cream), and didn't puree all of it, leaving some chunks of spinach to chew on. Also added a sliced hard-boiled egg, Norwegian style. Makes a delicious dinner!
