Texas-Style Beef Sushi

A fun Texas-style twist to sushi! Thin roast beef is wrapped around cheesy rice and refried beans.

Filling

1 1/2 cup raw rice
2 cups water
3 tablespoons white wine vinegar
1 teaspoon sugar
1 teaspoon cumin
3 tablespoons minced fresh parsley
3 tablespoons minced fresh cilantro
salt and pepper, to taste
1/2 cup grated monterey jack cheese

"Sushi" Wrap

1 pound rare roast beef, sliced 1/8.25 inch thick
1 cup refried black beans
1/2 teaspoon cumin
1 medium green bell pepper cut into thin, lengthwise strips
1 medium red bell pepper cut into thin, lengthwise strips
2 cups prepared salsa, for dipping
fresh chives, for tying sushi if desired

directions

Cook rice with water until all liquid is absorbed. In a small saucepan, combine the vinegar, sugar, and cumin. Boil and stir until sugar is dissolved. Stir into cooked hot rice, allow mixture to be absorbed. Let rice cool completely. Stir in parsley, cilantro, salt, pepper and cheese. Set aside.

Cut roast beef into 2-inch by 3-inch rectangles. Stir cumin into refried beans and spread in a thin layer on each beef slice. Top with some of the rice filling. Place strips of peppers vertically across rice; roll up jellyroll-style. Trim peppers evenly with edges of beef.

Refrigerate rolls until firm. Cut each roll into 3 1-inch slices. Tie with a chive if desired. Serve with salsa.

    What fun this recipe was! The rice is a twist on traditional sushi rice with some Texas-style flavors. It all rolls together nicely in the roast beef and is easy to eat. I didn't really think it needed the salsa for dipping. Maybe a different kind of sauce as salsa is usually chunky. Definitely a 5-star recipe!
