Ah, the unassuming envelope of onion soup mix. It's more than just for onion soup (or dip). It adds tremendous flavor (and convenience) in all these recipes.

ingredients
2 red bell peppers
2 green bell peppers
2 yellow bell peppers
3 cloves garlic, sliced

1/2 cup extra virgin olive oil
salt and pepper, as needed
8 slices bread, toasted
1 teaspoon chopped fresh basil
1 teaspoon chopped fresh parsley
directions

Roasted the peppers on the grill instead of in the oven as I think it gives them more smoky flavor. Made a nice appetizer served with small bread rounds.
