It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).
Slow Cooker Spinach & Bacon Breakfast Casserole

ingredients
5 slices white bread, cubed
1 box (10 ounce size) frozen spinach, thawed, squeezed dry
1/2 pound bacon, cooked and crumbled
2 cups blended shredded cheese, divided
1 small red bell pepper, chopped
1/4 cup onion, chopped
1 can (10.75 ounce size) cream of celery soup
5 eggs
1/2 cup evaporated milk
1/2 teaspoon salt
1/2 teaspoon dry mustard
1/8 teaspoon black pepper
directions
Combine the bread, spinach, bacon, 1 2/3 cups of the cheese, bell pepper and onion in a large bowl; pour into removable slow cooker crock container. Whisk together the soup, eggs, milk, salt, dry mustard and pepper in the large bowl. Pour egg mixture over bread mixture; stir gently to combine. Place lid on slow cooker. Refrigerate at least 3 hours or overnight.
Let crock container sit a room temperature for a few minutes (about 15) so it doesn't crack when you place it in the crockpot.
Cover container, cook on LOW for 6 to 7 hours OR on HIGH for 2 1/2 to 3 1/2 hours.
Sprinkle with remaining cheese. Let set with lid off for 15 minutes until cheese is melted.

Not to be confused with evaporated milk, sweetened condensed milk is very sweet (and very sticky) and used primarily in desserts.

This turned out great! I used a bag of fresh spinach instead of frozen and used turkey bacon and multigrain bread to make it healthier. Yum! I will definitely make this again. I loved he red pepper flavor in it.

I made this for a potluck brunch, and it was a huge hit! There weren't any leftovers!
