Spicy West African Okra

ingredients
1 pound large, fresh okra
3/4 cup minced onion
3 cloves garlic, minced
1 teaspoon salt
1/4 teaspoon freshly ground black pepper
2 teaspoons cayenne pepper
6 cups water
directions
Wash the okra, remove stems, and cut into 3 pieces. Set aside.
In a large saucepan, mix together the onion, garlic, salt, pepper, cayenne, and the water. Bring the mixture to a boil, add the reserved okra, reduce the heat to a simmer, and simmer for 15 to 20 minutes.
Drain the mixture in a colander, rinse quickly with water, and serve.
