Creole Okra and Tomatoes

ingredients
1/2 cup butter or margarine
1 onion, large, minced
1/2 green bell pepper, diced
1 quart okra, fresh, sliced/rinsed
4 tomatoes, fresh, coarsely chopped
salt, to taste
black pepper, to taste
directions
Melt butter in large skillet; add onion and saute over medium heat until soft. Add bell pepper, okra and tomatoes; season to taste.
Reduce heat; cover and simmer 20 minutes, stirring occasionally.

Just learned about some interesting ways to cook Okra.my mother who was an energetic cook taught me to prepare Coo coo with cornmeal& okra to be served with fish. Very delicious,a bit ancient now but I prepare it for me and other West Indies indie gene who visit just to have Bajans food.. I learned today that calloloo - which I thought was a soup made of okra/ green leaves in the spinach series is not the same as calloloo leaves and that calloloo is not cooked with okra....I,m feeling quite let down ( not really) this quite a surprise for me though.......Phemie..
