2 quail, butterflied
2 tablespoons honey
2 tablespoons seeded mustard
sea salt
cracked black pepper
directions
Mix honey and mustard together and coat the quail.
Place skin side down on a hot frying pan with a touch of oil. Season with salt and pepper.
Turn over after skin is golden (about 2 minutes) and finish cooking on the other side.
