Tuna, Pepper, and Papaya Salad

ingredients
1 can (12 ounce size) white tuna in water
4 cups mixed spring greens
1 jar (12 ounce size) roasted red peppers, drained
1 1/2 cup papaya, cubed
1 cup tomatoes, cut into 1/2-inch cubes
1/4 cup cilantro
3/4 cup cucumber, peeled and cut in 1/2-inch cubes
1/2 cup red onion, cut in 1/4-inch pieces
1/4 cup green onions, chopped
3/4 cup green bell pepper, cut in 1/4-inch pieces
1 bottle (16 ounce size) honey Dijon salad dressing
roasted peanuts, optional
directions
Drain tuna and flake with a fork. Arrange salad greens. Toss together remaining salad ingredients with dressing.
Divide vegetable mixture between salads. May sprinkle with roasted peanuts for festive flair.
